Low Moisture Vegetables
No waste, no cleaning, no cutting, no chopping, no refrigeration. This group of items represents the most amazing technological achievement in the history of the food industry. Now to give you just a few examples:

  1. Sweet Green Bell pepper Dices: An average bushel of fresh green peppers weighs roughly 22 pounds. After you have washed then died them, your end yield approximately 9 pounds of dices, but look at all the time and labor that went into those 9 pounds. You can take on #10 can of our Green Bell pepper Dices equals the yield of a bushel of fresh peppers and you don't have to worry about waste, cleaning, cutting, chopping, refrigeration and spoilage. In addition, the price is stable 12 months out of the year, whereas the price of a bushel of fresh green peppers will fluctuate during the year. This is an excellent product for all cooking and for all salad dishes.
  2. Sweet Oregon Garden Peas: This item truly represents one of the most amazing achievements in the institutional food industry. Here is a product that can be made up and be ready to serve just with the addition of water, and yet will retain all the eating qualities, as well as the natural appearance one finds in fresh garden peas without the necessity of cleaning, cutting, or waste involved.
  3. Puffed Carrots: Many customers have asked if we could provide them with the same delicious puffed carrots which were introduced earlier in a combination pack with our Freeze-Dried Peas and Carrots. Freeze Dried Vegetables
Because dehydration is accomplished in the absence of air (oxidation) and sometimes, but not always, at lower product temperatures, somewhat better retention of nutrient values might be expected with freeze drying than with conventional hot air drying methods. However, the type and severity of processing which a vegetable is subjected to prior to freezing and freeze drying is probably more of a factor in nutrient retention than the drying step itself. In addition, the porous structure of freeze- dried vegetable is very vulnerable to oxidation unless protectively packaged in an inert atmosphere or held in low temperature storage. Freeze Dried vegetables, because of their more dense structure retain their color and flavor, and presumably their nutrient values better than conventionally freeze dried vegetables.

Low Moisture Fruits
These are fruits with approximately 96% of the moisture removed. It cuts down storage space, no refrigeration is necessary, there is no waste, and no cutting or peeling of fruits. All the low moisture fruits in our line are made from only the choicest portion of the crop, and as you know, during the winter months when there is no crop or very little crop, the price of fresh fruit skyrockets. The price of low moisture fruits remains constant all year round due to the fact that we pack sufficient when crops are available.

Comparison of Cost Between Wet and Dry Pack

  • Wet pack contains 22 to 25 1/2 cup servings.
  • The dry equivalent yield is approximately 4 times more 1/2 cup servings in the rehydrated state.
  • Frozen and Wet pack both contain traces of salt. This restricts the amount used in special diets.
  • The taste, color and overall appearance of dehydrated products is equal or better than Wet pack because the Wet pack process includes a 2 hour "cook-out" while it is being processed.
  • Storage space on dehydrated specialties is comparatively small in relation to Wet pack
  • Servings will vary as far as size is concerned based on nutritional value and container limitations. Study the labels. Every product is complete - at most only the addition of water is necessary. Several are ready-to-use to supply a finished product.
